T-Ball!











It's Jack's first year of t-ball! It has been so much fun to watch him practice and then play his games! He loves it, and Luke loves it even more:-) Luke is so sad when he can't be on the field during games. We literally have to hold him so that he doesn't dart onto the field:-) I guess he will be a pro when he can really play in a few years!

Jack's favorite part is when the team huddles and says, "Gooooo Pirates!"

Happy Sixth Anniversary!


Jordan and I celebrated our sixth wedding anniversary on Saturday. I am so thankful for the wonderful husband and father that the Lord has blessed me with! I love Jordan now more than I ever have!

Claire at 7 Months!







Claire at 7 months:

1) She is our smiliest baby yet!
2) She is an excellent sleeper;
3) She LOVES her right thumb;
4) She enjoys eating solids, especially peas and bananas;
5) She is sitting up on her own;
6) She is scooting all over the house;
7) She is getting up on all fours trying her best to crawl;
8) She has been attempting to pull herself up in her crib the past week;
9) She is making all sorts of sounds, lots of "ba ba ba's" and "goo goo's;"
10) She loves to squeal in delight, and cry (a true girl cry) when she is upset!
11) She has her two bottom teeth!

We love her so much!

Grilled Chicken & Pineapple Quesadillas


Here’s what you need: Flour Tortillas, Monterey Jack Cheese, Pineapple, Cilantro, Chicken Breasts, and Barbecue Sauce…and whatever spices you’d like to use to spice up the chicken.


prep Time: 15 Minutes Cook Time: 25 Minutes Difficulty: Easy Servings: 6

Ingredients
8 whole Flour Tortillas
Butter Or Margarine
2 cups Grilled Pineapple, Sliced
3 whole Boneless, Skinless Chicken Breasts
Salt And Pepper, to taste
3 cups Monterey Jack Cheese, Grated
1 whole Jalapeno, Sliced
Cilantro
3 Tablespoons Barbecue Sauce
Preparation Instructions
(To grill pineapple: cut wedges, stick on skewers, and grill over low heat. Cut into slices.)
(To pound chicken, place inside a Ziploc bag and pound with a mallet or large can to flatten to uniform thickness.)
Sprinkle with salt and pepper and Cajun spice (or cumin/cayenne, etc.) Drizzle olive oil on a grill pan and grill on both sides until done, brushing with barbecue sauce. Set aside and slice into very thin slices.
Warm griddle over medium heat and put sizzling butter or margarine in the pan. Slightly warm and toast tortillas on both sides, then remove from griddle and set aside.
To assemble, sprinkle four browned tortillas with grated Monterey Jack. Arrange chicken slices evenly over the surface. Add pineapple slices and jalapeno slices. Sprinkle on cilantro. If desired, drizzle extra barbecue sauce over the top. Add second browned tortilla on top of each one. (You’ll have four complete quesadillas at this point.)
Add to oven to warm, or back to skillet to warm, until cheese is melted. Cut each quesadilla into six wedges. Serve with sour cream, pico de gallo, and lime wedges.

Friends and Firemen!













This weekend was fantastic! Three of my favorite people came to visit me, and Jack had his birthday party. Between Mary Poppins, a late night at the St. Regis, Jack's party, and late night Yoforia, it made for a great weekend!
